Grilled Chicken and Avocado Topping This is one of my FAVORITE meals and it’s so easy!!! I do have to give credit to one of my husband’s co-workers for sharing this avocado topping with us! Chicken Tacos

Chicken Taco Recipe! 1lb boneless skinless chicken breasts (I put mine in frozen!) Juice from 2 limes 1 packet of taco seasoning 1/2 cup water Directions: Add these ingredients into a crockpot.  Stir and cook on low 8-10 hours.  Even though the chicken will look done in 3 hours, let it go until 6 hours to make sure it’s fall apart tender! Slow Cooker Chicken

In the winter when it’s too cold to grill chicken (because that’s my favorite way to have chicken) I use the slow cooker! I love this because I can put a whole bag of frozen chicken (or however much I’ll need for that week) into the slow cooker, on low for 8-10 hours.  My house smells so good, like a rotisserie and the chicken falls apart so well!  Makes it REALLY easy to throw the chicken into a casserole later {Read More}

Butternut Squash Chili

Recipe for Butternut Squash Chili I didn’t come up with this idea, but I did tweek it to fit my families likes!  Please feel free to do the same!
